Steamed Carrot Pudding Recipe
Steamed puddings are, in my opinion, better, but they are slightly more difficult to make this way because it's harder to get the kitchen equipment. Get a large pot, stand a smaller pot inside above the boiling water. NOT a double-boiler.

Ingredients
  • 1/2 c shortening
  • 1 c sugar
  • 1 c finely grated carrots
  • 1 c finely grated potatoes
  • 1 c raisins
  • 1 c sliced dates
  • 1/2 c chopped nuts
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 Tbsp hot water
  • 1 1/4c sifted flour
  • 1/4 tsp salt

Directions
  1. Cream shortening with sugar thoroughly.
  2. Blend in the carrots, potatoes, raisins, dates, nuts, and vanilla.
  3. Dissolve the baking soda in the hot water, and add to the carrots.
  4. Sift flour, measure 1 1/4c, and then sift with salt.
  5. Stir flour into creamed mix.
  6. Spoon everything into a greased 2-qt mold, and steam for 2 hours.
