Steamed Carrot Pudding

- 1/2 c shortening shopping list
- 1 c sugar shopping list
- 1 c finely grated carrots shopping list
- 1 c finely grated potatoes shopping list
- 1 c raisins shopping list
- 1 c sliced dates shopping list
- 1/2 c chopped nuts shopping list
- 1 tsp vanilla shopping list
- 1 tsp baking soda shopping list
- 1 Tbsp hot water shopping list
- 1 1/4c sifted flour shopping list
- 1/4 tsp salt shopping list
How to make it
- Cream shortening with sugar thoroughly.
- Blend in the carrots, potatoes, raisins, dates, nuts, and vanilla.
- Dissolve the baking soda in the hot water, and add to the carrots.
- Sift flour, measure 1 1/4c, and then sift with salt.
- Stir flour into creamed mix.
- Spoon everything into a greased 2-qt mold, and steam for 2 hours.
