Crawfish Pie

- 1 lb crawfish tail meat shopping list
- 1 C celery, chopped shopping list
- 1 C red bell pepper, chopped shopping list
- 1 C onion, chopped shopping list
- 1/2 C butter shopping list
- 1/4 C minced garlic shopping list
- 1 C heavy cream shopping list
- 1 egg, beaten shopping list
- 1/2 C penko bread crumbs shopping list
- 2/3 C green onions, sliced shopping list
- 2/3 C minced parsley shopping list
- salt / pepper to taste shopping list
- 2 pie crusts, 9" shopping list
- 1 - 2 t Tabasco shopping list
How to make it
- Melt 1/2 C butter over high heat, but do not burn.
- Add celery, red bell pepper and onion.
- Add garlic after veggies have wilted. Cook 3 - 5 minutes
- Add Crawfish and juice. Cook 5 minutes
- Add Cream, Combine and simmer 10 minutes.
- Add egg yolk, bread crumbs. Cook on med-low heat.
- Add green onions and parsley. Turn off heat.
- Salt / pepper.
- Add 1 - 2 t Tabasco depending on how hot you like your food.
- Spoon into pie shell.
- Cover with 2nd pie shell, pinch to seal and piece to vent.
- Put on a baking sheet. Bake 10 minutes at 450. Then reduce to 350 and cook another 20 minutes. Let rest 15 minutes before slicing.
