Crawfish Pie Recipe
This is authentic cajun specialty type food. Great for guests. Serve with a salad OR add this as a nice side to steak - kind of surf / turf.

Ingredients
  • 1 lb crawfish tail meat
  • 1 C celery, chopped
  • 1 C red bell pepper, chopped
  • 1 C onion, chopped
  • 1/2 C butter
  • 1/4 C minced garlic
  • 1 C heavy cream
  • 1 egg, beaten
  • 1/2 C penko bread crumbs
  • 2/3 C green onions, sliced
  • 2/3 C minced parsley
  • salt / pepper to taste
  • 2 pie crusts, 9"
  • 1 - 2 t Tabasco

Directions
  1. Melt 1/2 C butter over high heat, but do not burn.
  2. Add celery, red bell pepper and onion.
  3. Add garlic after veggies have wilted. Cook 3 - 5 minutes
  4. Add Crawfish and juice. Cook 5 minutes
  5. Add Cream, Combine and simmer 10 minutes.
  6. Add egg yolk, bread crumbs. Cook on med-low heat.
  7. Add green onions and parsley. Turn off heat.
  8. Salt / pepper.
  9. Add 1 - 2 t Tabasco depending on how hot you like your food.
  10. Spoon into pie shell.
  11. Cover with 2nd pie shell, pinch to seal and piece to vent.
  12. Put on a baking sheet. Bake 10 minutes at 450. Then reduce to 350 and cook another 20 minutes. Let rest 15 minutes before slicing.
