A great spin on Mexican cornbread. Add some beef and cheese and you're done!

Ingredients
  • 1 box jiffy cornbread mix
  • 1 lb ground beef
  • 1 small onion, diced
  • 1 can mexicorn
  • 1 bag shredded cheese
  • 1 small jar picante sauce

Directions
  1. Preheat oven to 350
  2. Brown beef and onion and drain well
  3. Stir mexicorn in with beef and onion
  4. Pour in 13x9 baking dish
  5. Pour picante sauce over top
  6. Top with shredded cheese
  7. Place in oven
  8. Prepare cornbread as directed on box
  9. Remove from oven and pour cornbread mix over top
  10. Place back in oven for about 30 minutes or until cornbread is fully cooked
