How to make it

  • Slice beef across the grain into wafer-thin strips, measuring about 6cm x 1cm (this is most easily done if the beef is semi-frozen)
  • Place beef strips in a large, shallow dish, add Worcestershire sauce, garlic and thyme, toss to mix, then cover loosely and stand for 45 minutes. (I like to add a Tablespoon -15ml- of coarse black pepper in the 'mix')
  • Heat oil in a large frying pan and stir-fry steak briefly, until just browned, tossing all the time.
  • Add mushrooms and onions and keep tossing, over medium heat until softening.
  • Turn heat very low and add milk, tomato paste, soy sauce, salt and sugar. Stir to mix, then cover and simmer very gently for 4-5 minutes.
  • Just before serving, mix the cornflour with the sherry, stir into pan and allow to boil up, stirring until sauce has smoothed out and thickened.
  • Serve with rice or ribbon noodles and a crisp green salad.
