How to make it

  • cook manicotti shells (follow directions on the box)
  • while the shells cook...
  • open can of tomatoes, drain & rinse then put in large mixing bowl
  • mash up the 2 packages of tofu and add to bowl
  • add bag of frozen spinach
  • season to taste with basil onion and garlic
  • mix well
  • coat a large skillet with the 2 tbsp and set on high
  • add bowl of tofu,tomato,spinach etc. to the skillet - stir constantly
  • cook only until the spinach is unfrozen
  • when manicotti is done cooking drain and stuff
  • once stuffed grease a deep dish baking pan of any size large enough for all the stuffed shells
  • put shells in pan and empty entire jar of sauce on top of them
  • bake at 350 degrees for 10 minutes
