Ingredients
  • 1 box of manicotti shells
  • 2 pkg of soft tofu
  • 1 can of petite diced tomatoes
  • 1 bag of frozen cut leaf spinach
  • garlic salt to taste
  • minced onion to taste
  • basil to taste
  • jar of favorite tomato sauce
  • 2 tbsp of extra virgin olive oil

Directions
  1. cook manicotti shells (follow directions on the box)
  2. while the shells cook...
  3. open can of tomatoes, drain & rinse then put in large mixing bowl
  4. mash up the 2 packages of tofu and add to bowl
  5. add bag of frozen spinach
  6. season to taste with basil onion and garlic
  7. mix well
  8. coat a large skillet with the 2 tbsp and set on high
  9. add bowl of tofu,tomato,spinach etc. to the skillet - stir constantly
  10. cook only until the spinach is unfrozen
  11. when manicotti is done cooking drain and stuff
  12. once stuffed grease a deep dish baking pan of any size large enough for all the stuffed shells
  13. put shells in pan and empty entire jar of sauce on top of them
  14. bake at 350 degrees for 10 minutes
