This is straight from "The Catfish Capital of the World" and home of The Catfish Institute. My whole family loves this! Even good on chicken.

Ingredients
  • 6 lbs small catfish fillets
  • 3/4 C Parmesan cheese
  • 1/4 C flour
  • 1/2 t salt
  • 1/2 t pepper
  • 1 t paprika
  • 1 egg, beaten
  • 1 T milk
  • 1/4 C margarine, melted (I use spray butter flavored PAM)

Directions
  1. Combine cheese, flour, salt, pepper and paprika in a bowl.
  2. Mix egg and milk.
  3. Dip fish in egg mixture, then in cheese mixture to coat well.
  4. Place foil in a 13X9X2 inch baking dish and place fish on foil.
  5. (EASY clean up)
  6. Pour butter or spray over fish.
  7. Bake @ 350 until golden brown.
