Herbed Orange Rice Recipe
HERBED ORANGE RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Lindgren Estate in Allen, Texas in 1994.

Ingredients
  • 4 tablespoons butter
  • 2/3 cup chopped celery with leaves
  • 2 tablespoons minced onion
  • 1-1/2 cups water
  • 1 tablespoon grated orange peel
  • 1 cup orange juice
  • 1 teaspoon salt
  • 1/8 teaspoons thyme leaves
  • 1 cup regular long grain rice
  • Orange sections for garnish

Directions
  1. In saucepan over medium heat melt butter then cook celery and onion 5 minutes.
  2. Add water, orange peel, orange juice, salt and thyme.
  3. Heat to boiling then stir in rice.
  4. Reduce heat to low then cover and simmer 20 minutes.
