Thai Corriander Pepper Paste Recipe
A fragrant corriander paste to add to plain vegetables and to also use as a brilliant seafood marinade

Ingredients
  • 1 Bunch of corriander, roots intact
  • 20 black peppercorns
  • 2 tsp of good quality salt
  • 3-4 cloves of garlic
  • lemon juice

Directions
  1. using a mortar and pestle combine salt and garlic and grind to a smooth paste
  2. dry roast peppercorns, add to mortar and grind, the finer you grind the hotter the paste will be.
  3. Thouroughly clean corriander and chop roots and leaves.
  4. Add to mortar and grind till combined.
  5. Place in clean jar, cover with lemon juice and refrigerate
  6. Use a clean spoon each time you use the paste, 1 teaspoon is enough for most vegetable stir fry's
  7. Done.
  8. For seafood marinade, combine a teaspoon of paste with fish sauce, palm sugar and one small red chilli. grind in mortar and marinade seafood for 20 minutes.
