How to make it

  • using a mortar and pestle combine salt and garlic and grind to a smooth paste
  • dry roast peppercorns, add to mortar and grind, the finer you grind the hotter the paste will be.
  • Thouroughly clean corriander and chop roots and leaves.
  • Add to mortar and grind till combined.
  • Place in clean jar, cover with lemon juice and refrigerate
  • Use a clean spoon each time you use the paste, 1 teaspoon is enough for most vegetable stir fry's
  • Done.
  • For seafood marinade, combine a teaspoon of paste with fish sauce, palm sugar and one small red chilli. grind in mortar and marinade seafood for 20 minutes.
