Thai corriander pepper paste

- 1 Bunch of corriander, roots intact shopping list
- 20 black peppercorns shopping list
- 2 tsp of good quality salt shopping list
- 3-4 cloves of garlic shopping list
- lemon juice shopping list
How to make it
- using a mortar and pestle combine salt and garlic and grind to a smooth paste
- dry roast peppercorns, add to mortar and grind, the finer you grind the hotter the paste will be.
- Thouroughly clean corriander and chop roots and leaves.
- Add to mortar and grind till combined.
- Place in clean jar, cover with lemon juice and refrigerate
- Use a clean spoon each time you use the paste, 1 teaspoon is enough for most vegetable stir fry's
- Done.
- For seafood marinade, combine a teaspoon of paste with fish sauce, palm sugar and one small red chilli. grind in mortar and marinade seafood for 20 minutes.
