How to make it

  • Soak fish in a bowl of heavily salted water for 1 hour (this removes any "fishy taste", drain and rinse
  • Place milk in a large bowl,mix in the lemon juice or vinegar
  • Place the filets in and let soak for another hour, drain and rinse
  • Dredge filets in crushed crackers crumbs and place on a wire rack on top of a cookie sheet
  • Liberally cover the top side of each fish with Paprika
  • Dot with Olive Oil (sparingly)
  • Bake at 375F for about 15-20 minutes (depnding on the thickness of the filets)
