Baked Pickerel Dinner

- 4 Pickerel filets, bones and skinned shopping list
- 2 Cups milk shopping list
- 1 tbsp vinegar or lemon juice shopping list
- 1 1/2 Cups Crushed saltine crackers (Unsalted Tops) shopping list
- paprika (Spanish variety) shopping list
- olive oil shopping list
How to make it
- Soak fish in a bowl of heavily salted water for 1 hour (this removes any "fishy taste", drain and rinse
- Place milk in a large bowl,mix in the lemon juice or vinegar
- Place the filets in and let soak for another hour, drain and rinse
- Dredge filets in crushed crackers crumbs and place on a wire rack on top of a cookie sheet
- Liberally cover the top side of each fish with Paprika
- Dot with Olive Oil (sparingly)
- Bake at 375F for about 15-20 minutes (depnding on the thickness of the filets)
