Escarole Egg Drop Soup

- 6 cups chicken stock (I used Minor's chicken base today) shopping list
- 1 large bunch escarole, well cleaned and chopped shopping list
- 2 eggs, beaten shopping list
- 1/4 cup grated parmesan cheese shopping list
- salt and pepper shopping list
- nutmeg shopping list
How to make it
- Bring stock to simmer in large saucepan.
- Add escarole and simmer for 5-10 minutes.
- Stir grated cheese into beaten eggs.
- Stir egg and cheese mixture into simmering soup.
- Add salt, pepper and a few gratings of nutmeg to soup and serve.
