Escarole Egg Drop Soup Recipe
This is similar to spinach egg drop soup that an Italian aunt used to make. Delicious and easy!

Ingredients
  • 6 cups chicken stock (I used Minor's chicken base today)
  • 1 large bunch escarole, well cleaned and chopped
  • 2 eggs, beaten
  • 1/4 cup grated parmesan cheese
  • salt and pepper
  • nutmeg

Directions
  1. Bring stock to simmer in large saucepan.
  2. Add escarole and simmer for 5-10 minutes.
  3. Stir grated cheese into beaten eggs.
  4. Stir egg and cheese mixture into simmering soup.
  5. Add salt, pepper and a few gratings of nutmeg to soup and serve.
