How to make it

  • Saute 1/2 diced onion, 3 cloves diced garlic, and 1 jalapeno in a little water until golden brown (water will evaporate).
  • Remove from heat and add approximately 6 cups of water, 2-3 chicken bouillon cubes, and 3 diced Roma tomatoes.
  • Add to taste. Dried parsley and basil, hot sauce (can substitute V8) depending on your spice tolerance, balsamic vinegar, and soy sauce.
  • Bring to boil.
  • Add 2 cups of macaroni and cover and simmer until the noodles are cooked. Once the noodles are cooked turn off the heat, squeeze 2 limes into the soup and stir.
  • Prepare a bowl with crushed tortilla chips, and half an avocado and then pour the soup into the bowl.
  • Enjoy!
