Chocolate Filled Cake Roll Diabetic Recipe

- 5 eggs shopping list
- 1/2 c sugar shopping list
- 3 pkgs of sweet 'n low shopping list
- 1 tsp vanilla extract shopping list
- 3/4 c all purpose flour shopping list
- 2 tbsp cornstarch shopping list
- 1 tsp baking powder shopping list
- 2 c skim milk shopping list
- 1 pkg (1.4 oz.) sugar free chocolate instant pudding mix shopping list
- 2 tsp sugar free cocoa mix shopping list
How to make it
- preheat oven to 400
- grease and line bottom of a 10x15" jelly roll pan with waxed paper
- beat eggs in a lg bowl with mixer until fluffy
- sprinks sugar, sweet 'n low and vanilla over eggs; continue beating for 2 mins.
- sift flour, cornstarch and baking powder tigether
- sprinkle half the mixture over batter; fold in with spatula
- repeat with remaining flour mixture
- spread batter evenly in pan
- bake on centre rack for 10-12 mins or until cake is golden brown and springs back when lightly touched
- arrange towl on work surface and cover with aluminum foil
- loosen edges of cake; unmold on foil
- roll cake jelly roll style, using towl as guide
- leave cake until it cools into jelly roll shape
- to make filling, blend milk with pudding mix according to package directions
- refridgerate until pudding thickens
- unroll cake and spread evenly with pudding and reroll
- lightly sprinkle with sugar free cocoa over the top to decorate
- serve
