This pie is made with Ritz Crackers.

Ingredients
  • 3 egg whites (whip as for meringue)
  • 1 c. pecans (chopped coarsley)
  • 1/2 c. sugar
  • 20 Ritz crackers
  • 1/2 tsp. vanilla

Directions
  1. Beat whites of 3 eggs as for meringues, add 1/2 cup sugar.
  2. Crumble 20 Ritz crackers with one cup pecans.
  3. Fold into egg whites.
  4. Add 1/2 cup sugar and 1 teaspoon vanilla.
  5. Spoon into greased pan.
  6. Bake at 350 degrees for 35 minutes.
  7. Top with whipped cream or Cool Whip.
