How to make it

  • Cook bacon in large skillet until done, drain off excess fat. Wash and cut zuchini in 1/4 inch slices, add to skillet along with bacon, onion, garlic, celery, corn, tomato sauce and salt and pepper. Let simmer covered until squash is tender. Sprinkle cheese over top and cover until cheese is melted.
