Sugarless fruitnut muffins

- 1 cup chopped dates shopping list
- 1/2 cup raisins shopping list
- 1/2 cup chopped prunes shopping list
- 1 cup water shopping list
- 1/2 cup butter or margarine shopping list
- 1/4 tsp salt shopping list
- 2 eggs, beaten shopping list
- 1 tsp vanilla extract shopping list
- 1 cup flour-- half white/half whole wheat shopping list
- 1 tsp baking soda shopping list
- 1/2 cup chopped nuts shopping list
How to make it
- In a saucepan combine dates, raisins, prunes and water.
- Bring to boil and boil 5 minutes.
- Stir in margarine and salt.
- Set aside to cool.
- Add remaining ingredients to fruit.
- Stir just until dry ingredients are moistened.
- Spoon in greased mini-muffin pans
- Bake at 350 degrees for 15 mins.
- (If desired, bake in a 22 x 7 x 2 baking pan for 30 mins)
- Diabetic exchanges: one muffin equals 1/2 fruit; 1 fat; 1/2 starch
- 94 calories; 52 mg sodium; 14 mg cholesterol; 12 gm carb; 2 gm protein; 4 gm fat.
