How to make it

  • Clean and grill the prawns in lemon butter.
  • Cut the top 1/3 off the tomato and scoop the pulp out.(Keep the pulp and the top third in the freezer to use in soups or stews.)
  • Make the white sauce, but please add a little dry white wine to it.
  • Add the prawns to the white sauce, reserving 1 prawn per serving.
  • Fill the tomatoes wit h the prawns in white sauce.
  • Hook 1 prawn over the edge of each tomato.
  • heat under the grill for about 30 seconds. Just enough to heat the tomato, but not long enough to blacken the prawns.
