Spinach Soup Recipe

Ingredients

10 potatoes cubed and cooked

2 cans diced tomatoes

2 chorizo sausage

1 can kidney beans

1 can garbanzo beans

1 large bag of baby spinach

2 medium onions

2 large cans of chicken broth

Directions

Cook your cubed potatoes and drain and set aside

saute chopped onion in 1 tbs olive oil

add skinned and cubed chorizo and saute 5-10 minutes on low heat

add tomatoes, beans, potatoes, and spinach

pour chicken broth over top

cover and bring to boil

reduce heat to low and let soup slow cook for 2 hrs.

stir occasionally

That sounds so amazing! i'm a vegan though, but soy chorizo and veggie broth works wonders as well!
and it's perfect since my mom's south american, she loves chorizo. something we all can enjoy together. :)
