How to make it

  • Cook pasta according to package directions: drain well
  • Set aside and keep warm.
  • Drain capers reserving 1 1/2 Tbs liquid; set aside
  • Cook onion, red pepper, yellow pepper and mushrooms in oil until vegetables are tender.
  • Add reserved capers and liquid, tomatoes, black beans, kidney beans, ripe olives,rosemarry, basil and pepper.
  • Bring to a boil; reduce heat and simmer 30 minutes stirring mixture occasionally.
  • Remove pasta to a serving platter; spoon tomato mixture over pasta.
  • Sprinkle with cheese.
