Black Bean Spaghetti

- 1 (12 ounce) package angel hair pasta shopping list
- 1 (3 1/2 ounce) jar of capers, undrained shopping list
- 1 large onion, thinly sliced shopping list
- 1 small sweet red pepper, cut into thin strips shopping list
- 1 small sweet yellow pepper, cut into thin strips shopping list
- 1/2 pound fresh mushrooms, sliced shopping list
- 2 Tbs olive oil shopping list
- 1 (16 ounce) can whole tomatoes, undrained and chopped shopping list
- 1 (15 ounce) can black beans, rinsed and drained shopping list
- 1 (15 ounce) can kidney beans, undrained shopping list
- 1/4 slice ripe olives shopping list
- 1/4 tsp dried rosemary shopping list
- 1/4 tsp dried basil shopping list
- 1/4 tsp pepper shopping list
- Freshly grated Parmeasan cheese shopping list
How to make it
- Cook pasta according to package directions: drain well
- Set aside and keep warm.
- Drain capers reserving 1 1/2 Tbs liquid; set aside
- Cook onion, red pepper, yellow pepper and mushrooms in oil until vegetables are tender.
- Add reserved capers and liquid, tomatoes, black beans, kidney beans, ripe olives,rosemarry, basil and pepper.
- Bring to a boil; reduce heat and simmer 30 minutes stirring mixture occasionally.
- Remove pasta to a serving platter; spoon tomato mixture over pasta.
- Sprinkle with cheese.
