Veal Fillet With Chocolategarlic And Red Forest Fruits Sauce Recipe

Ingredients
  • 2 veal filets
  • 4 tbs rote grutze sauce (coulis of red fruits in special shops)
  • 1 tbs Dijon mustard
  • 1 tsp balsamic vinegar
  • 1 cup meat stock
  • 1 cup strong espresso coffee
  • 1/4 tsp bitter chocolate melted
  • 2 garlic cloves squashed
  • 2 tbs butter
  • 1 sprig thyme
  • 1 tbs oregano flours
  • 2 tbs olive oil
  • 1/2 cup milk cream
  • 1/2 tsp coriander ground
  • Salt and pepper to taste
  • 2 green apples
  • 500 gr. potatoes
  • parsley leaves
  • 1/2 tbs lemon juice

Directions
  1. Place the aromatic herbs, garlic, olive oil and 2 tbs of water in aluminium foil, wrap and bake at 100 C. for 2,5 hours.
  2. Put them in a bowl and fold in the milk cream. Salt and pepper and keep warm.
  3. Baste the fillets with the rote grutze sauce and mustard and grill them at 200 C. for 4 minutes.
  4. Put them in an oven dish , pour over them the coffee, chocolate, butter and meat stock.
  5. Sprinkle with salt, pepper and coriander, cover the dish and bake at 180 C. for 20 minutes.
  6. Cut the potatoes in very thin slices.
  7. Place a parsley leaf at the center of a slice then use another slice to cover the first one.
  8. Deep fry the “sandwiched” potatoes being careful not to let them go apart.
  9. Cut each apple in very thin slices.
  10. Pour the balsamic and lemon juice over and place them like a fan on 2 plates.
  11. Put the deep fried potato slices on top.
  12. At the center of each plate place the veal fillet, pour the garlic sauce over and serve.
