Veal fillet with chocolategarlic and red forest fruits sauce

- 2 veal filets shopping list
- 4 tbs rote grutze sauce (coulis of red fruits in special shops) shopping list
- 1 tbs Dijon mustard shopping list
- 1 tsp balsamic vinegar shopping list
- 1 cup meat stock shopping list
- 1 cup strong espresso coffee shopping list
- 1/4 tsp bitter chocolate melted shopping list
- 2 garlic cloves squashed shopping list
- 2 tbs butter shopping list
- 1 sprig thyme shopping list
- 1 tbs oregano flours shopping list
- 2 tbs olive oil shopping list
- 1/2 cup milk cream shopping list
- 1/2 tsp coriander ground shopping list
- salt and pepper to taste shopping list
- 2 green apples shopping list
- 500 gr. potatoes shopping list
- parsley leaves shopping list
- 1/2 tbs lemon juice shopping list
How to make it
- Place the aromatic herbs, garlic, olive oil and 2 tbs of water in aluminium foil, wrap and bake at 100 C. for 2,5 hours.
- Put them in a bowl and fold in the milk cream. Salt and pepper and keep warm.
- Baste the fillets with the rote grutze sauce and mustard and grill them at 200 C. for 4 minutes.
- Put them in an oven dish , pour over them the coffee, chocolate, butter and meat stock.
- Sprinkle with salt, pepper and coriander, cover the dish and bake at 180 C. for 20 minutes.
- Cut the potatoes in very thin slices.
- Place a parsley leaf at the center of a slice then use another slice to cover the first one.
- Deep fry the “sandwiched” potatoes being careful not to let them go apart.
- Cut each apple in very thin slices.
- Pour the balsamic and lemon juice over and place them like a fan on 2 plates.
- Put the deep fried potato slices on top.
- At the center of each plate place the veal fillet, pour the garlic sauce over and serve.
