How to make it

  • Place the aromatic herbs, garlic, olive oil and 2 tbs of water in aluminium foil, wrap and bake at 100 C. for 2,5 hours.
  • Put them in a bowl and fold in the milk cream. Salt and pepper and keep warm.
  • Baste the fillets with the rote grutze sauce and mustard and grill them at 200 C. for 4 minutes.
  • Put them in an oven dish , pour over them the coffee, chocolate, butter and meat stock.
  • Sprinkle with salt, pepper and coriander, cover the dish and bake at 180 C. for 20 minutes.
  • Cut the potatoes in very thin slices.
  • Place a parsley leaf at the center of a slice then use another slice to cover the first one.
  • Deep fry the “sandwiched” potatoes being careful not to let them go apart.
  • Cut each apple in very thin slices.
  • Pour the balsamic and lemon juice over and place them like a fan on 2 plates.
  • Put the deep fried potato slices on top.
  • At the center of each plate place the veal fillet, pour the garlic sauce over and serve.
