How to make it

  • Clean and peel most of the skin from the potatoes, cut into quarters
  • Place in roomy pot and add cold water over potatoes so they have about a 1/2 inch covering them
  • Bring to a boil, cover and reduce heat to med-high for about 30 minutes or until they are soft and slide easily off a fork
  • Drain and put back into pot on low heat
  • Add Milk, butter and salt and pepper to taste
  • Mash potatoes or use electric mixer until smooth
  • Pre-heat oven to 350
  • Fry the ground beef
  • When cooked, drain fat
  • Add can of Corn and diced up onion
  • Cook on med-high heat for about 4 minutes, stirring frequently
  • Line the bottom of a baking dish with beef mixture
  • Next add layer of potatoes
  • Sprinkle with Bacon pieces
  • Bake for 5 minutes in a pre-heated oven at 350
  • Cover with Shredded Cheddar Cheese
  • Bake for an additional 3 minutes, or until cheese is melted and bubbly
