Hearty Shepherds Pie

- 5-6 potatoes (Russet, Yukon Gold or Red) shopping list
- 1 lb. ground beef shopping list
- 1 can of corn shopping list
- 1/2 onion Diced shopping list
- 2 cups of Shredded cheddar cheese shopping list
- 1 package of bacon pieces shopping list
- 1 cup of milk shopping list
- 2 1/2 Tbsp. butter shopping list
- salt shopping list
- pepper shopping list
How to make it
- Clean and peel most of the skin from the potatoes, cut into quarters
- Place in roomy pot and add cold water over potatoes so they have about a 1/2 inch covering them
- Bring to a boil, cover and reduce heat to med-high for about 30 minutes or until they are soft and slide easily off a fork
- Drain and put back into pot on low heat
- Add Milk, butter and salt and pepper to taste
- Mash potatoes or use electric mixer until smooth
- Pre-heat oven to 350
- Fry the ground beef
- When cooked, drain fat
- Add can of Corn and diced up onion
- Cook on med-high heat for about 4 minutes, stirring frequently
- Line the bottom of a baking dish with beef mixture
- Next add layer of potatoes
- Sprinkle with Bacon pieces
- Bake for 5 minutes in a pre-heated oven at 350
- Cover with Shredded Cheddar Cheese
- Bake for an additional 3 minutes, or until cheese is melted and bubbly
