How to make it

  • Grate lemon rind finely, and juice both lemons
  • Combine rind, juice, oil, gralic, and mustard in a screw top jar. Shake well
  • Cook pasta til al dente
  • Combine remaining ingredients in a large bowl, and add draines pasta.
  • Add dressing and toss gently to combine.
  • Note: you can serve this hot or cold. The rocket will wilt with the hot pasta, but it still tastes great.
  • Sprinkle with extra pine nuts and parmesan to serve. Have some lovely warm bread on the table as well....
