Salmon Rocket And Herb Pasta

- 2 lemons shopping list
- 2 tbspns extra virgin olive oil shopping list
- 1 clove gralic, crushed shopping list
- 1 tbspn Dijon mustard shopping list
- 250g angel hair pasta shopping list
- 1/3 cup (50g) toasted pine nuts shopping list
- 415g can pink or red salmon, drained and flaked shopping list
- 250g cherry tomatoes, halved shopping list
- 1/3 cup (55g) caperberries, halved (or use seedless grapes) shopping list
- 100g rocket leaves (or your favourite salad leaves) shopping list
- 1 cup loosely packed fresh basil leaves shopping list
- 1/4 cup loosely packed fresh dill tips shopping list
How to make it
- Grate lemon rind finely, and juice both lemons
- Combine rind, juice, oil, gralic, and mustard in a screw top jar. Shake well
- Cook pasta til al dente
- Combine remaining ingredients in a large bowl, and add draines pasta.
- Add dressing and toss gently to combine.
- Note: you can serve this hot or cold. The rocket will wilt with the hot pasta, but it still tastes great.
- Sprinkle with extra pine nuts and parmesan to serve. Have some lovely warm bread on the table as well....
