A great recipe using pink or red salmon- you choose. This is wonderful on summer nights, or if you just want something light.

Ingredients
  • 2 lemons
  • 2 tbspns extra virgin olive oil
  • 1 clove gralic, crushed
  • 1 tbspn dijon mustard
  • 250g angel hair pasta
  • 1/3 cup (50g) toasted pine nuts
  • 415g can pink or red salmon, drained and flaked
  • 250g cherry tomatoes, halved
  • 1/3 cup (55g) caperberries, halved (or use seedless grapes)
  • 100g rocket leaves (or your favourite salad leaves)
  • 1 cup loosely packed fresh basil leaves
  • 1/4 cup loosely packed fresh dill tips

Directions
  1. Grate lemon rind finely, and juice both lemons
  2. Combine rind, juice, oil, gralic, and mustard in a screw top jar. Shake well
  3. Cook pasta til al dente
  4. Combine remaining ingredients in a large bowl, and add draines pasta.
  5. Add dressing and toss gently to combine.
  6. Note: you can serve this hot or cold. The rocket will wilt with the hot pasta, but it still tastes great.
  7. Sprinkle with extra pine nuts and parmesan to serve. Have some lovely warm bread on the table as well....
