Bangin Manicotti Recipe
A very cheesy and filling Italian dish that's so simple to make, a sure favorite!

Ingredients
  • 4 cups of Mozzarella cheese
  • 1 (16 oz +) container of Ricotta Cheese (I use more)
  • 1/4 cup grated Parmesan Cheese
  • 1 box Manicotti noodles
  • 1 egg
  • I lb Beef
  • 2 jars of Spaghetti Sauce
  • 1 package of fresh or thawed chopped spinach
  • 1 cup diced onion
  • 1/2 cup of Feta cheese (optional)
  • 1- 1 1/2 cups finely chopped cooked Italian sausage (optional)

Directions
  1. Cook Manicotti noodles as directed on package
  2. Drain and let noodles cool
  3. Warm spaghetti sauce in saucepan
  4. Fry beef and drain fat
  5. Add onion to pan and simmer on med-high while stirring for 3 minutes
  6. Add beef and onion to sauce
  7. In a large mixing bowl, add ricotta, spinach, egg, 2 cups of mozzarella, and parmesan cheese (optional- add feta and/or sausage for a different tasting manicotti)
  8. Use hands to combine ingredients
  9. Preheat oven to 350
  10. Seperate noodles on aluminum foil
  11. Split any noodles that didn't open up during cooking
  12. Lay each noodle flat and add cheese mixture from bowl onto the end of each noodle
  13. Now roll each noodle up so opening is on the bottom and cheese roll stays together
  14. Line the bottom of a large baking dish with 1/2 of meat sauce
  15. Place manicotti rolls in sauce
  16. Cover with remaining sauce
  17. Place aluminum foil over dish and place in pre-heated oven at 350 for 35 minutes
  18. Spread remaining Mozzarella cheese on the top and bake uncovered for an additional 4 minutes, or until cheese is golden and bubbly
