Cheddar Scallop Cakes Recipe

Ingredients

1/2 lb fresh scallops, drained and chopped

2 green onions, minced

1/2 cup mild or medium Cheddar, shredded

1/4 cup flour

2 eggs, each beaten separately

3/4 cup flour

1/2 cup dry breadcrumbs

2 Tbsp olive oil

2 Tbsp butter

Fresh Herb Salad:

1 1/2 cups flat leaf Italian parsley, washed and trimmed

1 cup arugula, washed and trimmed

3/4 cup celery leaves, washed

1/4 cup fresh chives, snipped

3 Tbsp extra virgin olive oil

1 1/2 Tbsp lemon juice

Salt and freshly ground pepper to taste

Directions

In a bowl, combine scallops, green onions and cheese. Sprinkle with flour and add 1 beaten egg. Add salt and pepper to taste and refrigerate for 15 minutes to blend flavours.

Meanwhile, finely chop parsley, arugula, celery leaves and chives; place in a bowl.

Shape scallop mixture into 8 cakes. Coat each cake with flour, dip quickly into second beaten egg and then in breadcrumbs.

In a large frypan, heat oil and melt in butter over medium heat. Cook cakes for about 2 minutes per side until golden.

Combine herbs for 4 salads, toss and plate. Sprinkle with oil and lemon juice, salt and pepper. Top each with two scallop cakes and serve immediately ... and ENJOY!
