How to make it

  • First lightly toast the coconut in a toaster oven or frying pan. ( Set aside to cool )
  • Mix together vanilla and banana instant pudding with the 2 cups milk
  • Add in the softened cream cheese and mix with a hand mixer until thickened. ( Set aside )
  • Put small amount of mixture to cover the bottom
  • Add sliced bananas ( set some aside for top layer )
  • Now add the pudding mixture
  • Add remaining banana's
  • Top with whipped topping forming points
  • Sprinkle the toasted coconut on top
  • I have prepared it in a pie pan, and also a 9X13 for the larger crowd.
  • I just make the necessary adjustmentsI also have made it with low fat products, though it was good, it did not stand up as well.
