zingy zangy potatoe salad

- 1kg or 2.2lbs of potatoes shopping list
- 2tblspns vegtable stock powder( i use vegeta) shopping list
- 100mls xtra virgin olive oil (or there abouts) shopping list
- 3 or 4 good grinds of black pepper shopping list
- 6 good splashes of red wine vinegar shopping list
- 1 large onion (diced very small) shopping list
How to make it
- peel dirty potatoes or wash clean potatoes and cut into bite size pieces
- place in a pot with water and bring to the boil till the potatoes are nearly cooked
- drain and allow to nearly cool
- add potatoes to a large mixing bowl
- then add potatoes then the olive oil
- then diced onions and black pepper
- then add the vegeta or powdered stock
- now add the redwine vinegar
- toss all ingredients together gently
- when all mixed cover with cling wrap and refridgerate.
- when completly cooled serve.
- *** can be made the day before for the best results ****
- always tastes better the longer it is cooled (enjoy)
