Pork Tenderloin And Orange Saffron Sauce Recipe
This is a recipe I got off the web a few years back and make on occasion as we all love it. We had this for dinner last night with garlic mashed potatoes and caesar salad. It was incredible. Hope you enjoy as much as we do.

Ingredients
  • 1 pork tenderloin
  • 2 tablespoons olive oil
  • 1/2 small white onion finely chopped
  • 1 clove garlic finely chopped
  • 1 orange
  • 1/2 cup dry white wine
  • 1/2 cup sour cream
  • 1/4 teaspoon salt
  • 1 tablespoon triple sec
  • 1/8 teaspoon saffron
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions
  1. Trim pork tenderloin then fold over thin side so meat is equal thickness along length.
  2. Attach with twine or skewers then season meat with black pepper.
  3. Set heavy pan over medium high heat and add vegetable oil.
  4. Cook tenderloin from all sides until well browned then remove from pan and set aside.
  5. Reduce heat then add chopped onion and cook until soft and translucent.
  6. In the meantime use a vegetable peeler to cut off very thin slices of orange peel.
  7. Add orange peel and garlic to pan then cook 2 minutes but do not brown garlic.
  8. Add wine and salt then return tender to pan and cover partially.
  9. Cook meat over medium heat for 25 minutes.
  10. Remove from pan and wrap in foil then keep warm while preparing sauce.
  11. Remove orange peel slices from pan and cut into fine strips to use as garnish.
  12. Squeeze orange add juice then add triple second and saffron.
  13. Reduce until only a small amount of liquid is left then reduce heat and stir in sour cream.
  14. Adjust seasoning with salt and pepper then unwrap meat and remove twine.
  15. Add liquid that has collected in foil to the sauce.
  16. Slice meat and serve with sauce and garnish with orange peel strips.
