This is a meal on it's own! It looks like a lot of preparation but it's very quick. I use the microwave. The directions are detailed also.

Ingredients
  • 1 bunch silver beet or a bag of spinach. (About 400g)
  • 4-6 slices bacon (about 100g)
  • 2 free-range eggs
  • Vinegarette:
  • 1tsp sugar
  • 1tsp mustard
  • couple of grinds pepper
  • 1tbsp olive oil (or equivalent)
  • 3tbsp balsamic vinegar (or equivalent)

Directions
  1. Cook the bacon to make it crispy. (I lie mine on a plate and cover with a lid and microwave for 4 mins).
  2. Meanwhile boil a cup of water in the kettle.
  3. Finely chop the silver beet/ spinach and, microwave in a covered large glass bowl with 1/2 cup of boiled water for 1 min.
  4. While that's cooking, chop the bacon finely.
  5. Crack 2 eggs into seperate microwaveable bowl and mix to break up the yolk. Cover and microwave for 1.5 mins.
  6. Drain the silverbeet and add the chopped bacon and chopped cooked egg.
  7. To make the vinegarette add all the listed ingredients into a jar with a lid, and shake. Pour over the salad just before serving. Enjoy!
