How to make it

  • Cook the bacon to make it crispy. (I lie mine on a plate and cover with a lid and microwave for 4 mins).
  • Meanwhile boil a cup of water in the kettle.
  • Finely chop the silver beet/ spinach and, microwave in a covered large glass bowl with 1/2 cup of boiled water for 1 min.
  • While that's cooking, chop the bacon finely.
  • Crack 2 eggs into seperate microwaveable bowl and mix to break up the yolk. Cover and microwave for 1.5 mins.
  • Drain the silverbeet and add the chopped bacon and chopped cooked egg.
  • To make the vinegarette add all the listed ingredients into a jar with a lid, and shake. Pour over the salad just before serving. Enjoy!
