Pumpkin Pecan Parfaits

- 1 cup fat free milk shopping list
- 1 15 oz can pumpkin shopping list
- 2 packages sugar free, fat free vanilla instant pudding and pie mix shopping list
- 1 tsp ground cinnamon shopping list
- 1/2 tsp ground ginger shopping list
- 1/4 tsp ground cloves shopping list
- 1 cup whipping cream shopping list
- 8 oz low fat cream cheese, softened shopping list
- 1/4 cup Splenda shopping list
- 2 tsp vanilla extract shopping list
- 1/2 cup finely chopped pecans shopping list
How to make it
- In a medium bowl, combine milk, pumpkin, pudding mixes and spices. Beat until well blended. Set aside.
- Whip cream until stiff. Set aside.
- In a medium bowl, mix cream cheese, Splenda, and vanilla extract. Fold whipped cream into cream cheese mixture.
- To assemble, spoon 2 Tbsp pumpkin mixture into parfait or small wine glasses. Add 1 Tbsp cream cheese/whipped cream mixture and 1/2 Tbsp pecans. Repeat once.
