How to make it

  • Add the quinoa to 2 cups of boiling water and let it cook until done, about 15 min.
  • Meanwhile saute the onion in the olive oil for about 2-3 minutes in a large pan or wok. Add the garlic and saute for an extra minute. Add the chilli and the spices and continue to saute for 30 sec.
  • Add the toms. If the mixture seems to dry, add a splash of water. Add the chick peas.
  • When the quinoa is done, drain it and add to the pan. Mix well and add the peas. Cook for about a minute and add salt and pepper. You could also add Braggs Amino's at this point, it gives lovely flavour.
  • Add the raisins, almonds and coriander, mix well and you're done!
