Chick Pea And Quinoa Saute

- 1 tablespoon olive oil shopping list
- 1 onion, chopped shopping list
- 2 cloves of garlic, minced shopping list
- 1 medium hot chilli, seeded and minced shopping list
- 1 teaspoon turmeric shopping list
- 1 teaspoon ground coriander shopping list
- 2 teaspoons ground cumin shopping list
- 1 can of chick peas, drained and rinsed. shopping list
- 1/2 can of chopped tomatoes shopping list
- 1 cup of quinoa shopping list
- 1/2 cup peas shopping list
- (dash of Bragg's) shopping list
- 1/2 cup raisins shopping list
- 1/2 cup almonds shopping list
- handful of beansprouts shopping list
- small handful fresh coriander, chopped shopping list
- salt and pepper to taste shopping list
How to make it
- Add the quinoa to 2 cups of boiling water and let it cook until done, about 15 min.
- Meanwhile saute the onion in the olive oil for about 2-3 minutes in a large pan or wok. Add the garlic and saute for an extra minute. Add the chilli and the spices and continue to saute for 30 sec.
- Add the toms. If the mixture seems to dry, add a splash of water. Add the chick peas.
- When the quinoa is done, drain it and add to the pan. Mix well and add the peas. Cook for about a minute and add salt and pepper. You could also add Braggs Amino's at this point, it gives lovely flavour.
- Add the raisins, almonds and coriander, mix well and you're done!
