This is a real show stopper. Great WOW entree or side dish as well. Very rich and extremely creamy and flavorful.

Ingredients
  • Filling:
  • 1 lb Sea Scallops
  • 1 T. Chopped Shallots
  • 1 T. Chopped Garlic
  • 1/4 t. White Pepper
  • 1/8 t. Salt
  • 1 T. Butter
  • 3 T. Flour
  • 1/2 Cup Claim Juice
  • 1/2 Cup Heavy Cream
  • 1/4 Cup Grated Swiss Cheese (I add a little more)
  • The Topping:
  • 3/4 Cup Grated Swiss Cheese
  • 1/2 Cup Panko bread crumbs
  • 1/4 Cup Chopped Fresh Parsley

Directions
  1. Pre-heat oven to 400
  2. Measure out all Filling ingredients before starting. The filling comes together very quickly.
  3. Combine all topping ingredients.
  4. Filling:
  5. Melt Butter in a Saute Pan. Add Shallots and Garlic. Saute for 3 minutes. Add the Scallops and cook on each side for a couple of minutes until they are half way done. Add Flour and cook for 30 seconds. Add the Heavy Cream and Claim Juice. Stir until thickened. Fold in Swiss Cheese. Season with Salt and Pepper. Place filling in baking dish and spread topping over scallops evenly. Bake for 20-30 minutes until golden brown.

OK...too decadent to be figure friendly, but it's not exactly a once a week dish, its more of one for special dining and entertaining

BTW... My mom lives in San Diego and I visit for a month, twice a year! I never like returning home... never would if it were not for my family! LOL!!!
