Ambrosia Muffin Cakes

- 1 can (8 oz.) crushed pineapple, drained shopping list
- 1 can (11 oz.) mandarin orange segments, drained shopping list
- 1 large banana, sliced shopping list
- honey of a Muffin (recipe below) shopping list
- 1-1/2 cups thawed whipped topping, divided shopping list
- 1/4 cup flake coconut, toasted shopping list

- honey OF A MUFFIN: shopping list
- 1-1/3 cups flour shopping list
- 1/2 cup sugar shopping list
- 1 Tbsp. baking powder shopping list
- 1/4 tsp. salt shopping list
- 1 egg shopping list
- 1 cup milk shopping list
- 1/3 cup butter or margarine, melted shopping list
- 1-1/2 cups honey-flavored multi-grain cereal flakes with oat clusters, any variety shopping list
How to make it
- MIX fruit.
- SPLIT each muffin into 2 layers. Spoon about 1/4 cup of the fruit mixture and 1 Tbsp. whipped topping onto bottom half of each muffin; cover with top of muffin.
- TOP each with 1 Tbsp. of the whipped topping and 1 tsp. of the coconut.

- HONEY OF A MUFFIN:
- PREHEAT oven to 400°F. Mix flour, sugar, baking powder and salt in large bowl. Beat egg in small bowl; stir in milk and butter. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal.
- SPOON batter into greased or paper-lined muffin pan, filling each cup 2/3 full.
- BAKE 20 min. or until golden brown. Serve warm.
