This is a salad that even kids would enjoy. It is sweet and has a delicate cinnamon maple dressing with a hint of gingerbread thrown in.

Ingredients
  • 1 tbsp pure maple syrup
  • 1 tbsp apple cidar vinegar
  • 1 tbsp water
  • 2 tsp olive oil
  • 1/8 tsp pepper
  • 1/8 tsp ground ginger
  • 1/4 tsp cinnamon
  • 4 Bartlet pears, cored and sliced
  • 1 tbsp lemon juice
  • 2 tbsp pecans, finely chopped
  • 1 ginger sugar cookie, ground
  • 1 tbsp parmesan cheese, finely grated
  • 230 g salad mix (such as romaine, carrots, radicchio)

Directions
  1. Whisk together syrup, vinegar, water, oil, pepper, ginger and cinnamon. Set aside.
  2. In a separate bowl, toss together pear slices and lemon juice.
  3. Add pecans and cookie crumbs and toss.
  4. Toss with salad mix.
  5. Add dressing and cheese and toss well.
  6. Serve immediately.
