Ingredients
  • 3 cups shredded carrots
  • 1 cup pineapple tidbits packed in juice drained but reserve 2 tablespoons liquid
  • 1/2 cup raisins
  • 1/2 cup miniature marshmallows
  • 1/2 cup mayonnaise
  • 1/2 cup frozen whipped topping thawed
  • 1 teaspoon coconut extract
  • 2 tablespoons flaked coconut

Directions
  1. In large bowl combine first 4 ingredients.
  2. In small bowl combine mayonnaise, whipped topping, extract and 2 tablespoons juice
  3. Add to large bowl then cover and refrigerate until ready to serve.
  4. Serve on lettuce leaves and top each serving with a teaspoon flaked coconut.
