How to make it

  • Preheat oven to 400.
  • In large skillet heat olive oil over medium high and saute onion 5 minutes.
  • Add in garlic slices and potatoes then stir 3 minutes.
  • Add 3 tablespoons water then cover and cook until tender about 6 minutes.
  • Add pine nuts and stir then add in spinach leaves and cook until just wilted.
  • Remove from heat the spread pesto on prepare pizza dough.
  • Lay onions, potatoes, garlic, pine nuts and spinach evenly over pesto and sprinkle with herbs.
  • Crumble feta cheese over pizza and drizzle a little olive oil over potatoes and around outer crust.
  • Bake 20 minutes then serve.
