Potato Lovers Pizza

- 2 tablespoons extra virgin olive oil shopping list
- 1 red onion sliced shopping list
- 8 garlic cloves sliced thinly shopping list
- 6 small red potatoes scrubbed and sliced thinly shopping list
- 3 tablespoons water shopping list
- 3 tablespoons pine nuts shopping list
- 1 bunch fresh spinach washed and stemmed shopping list
- pizza dough stretched and rolled out shopping list
- 1/2 cup sun dried tomato basil pesto shopping list
- 1 teaspoon Italian herbs shopping list
- 1 teaspoon marjoram shopping list
- 4 ounces feta cheese crumbled shopping list
How to make it
- Preheat oven to 400.
- In large skillet heat olive oil over medium high and saute onion 5 minutes.
- Add in garlic slices and potatoes then stir 3 minutes.
- Add 3 tablespoons water then cover and cook until tender about 6 minutes.
- Add pine nuts and stir then add in spinach leaves and cook until just wilted.
- Remove from heat the spread pesto on prepare pizza dough.
- Lay onions, potatoes, garlic, pine nuts and spinach evenly over pesto and sprinkle with herbs.
- Crumble feta cheese over pizza and drizzle a little olive oil over potatoes and around outer crust.
- Bake 20 minutes then serve.
