Potato Lovers Pizza Recipe
This is a nice change from the traditional pizza. I love the taste of pesto and it is very apparent here. Great with the potatoes and other flavors combined. Enjoy

Ingredients
  • 2 tablespoons extra virgin olive oil
  • 1 red onion sliced
  • 8 garlic cloves sliced thinly
  • 6 small red potatoes scrubbed and sliced thinly
  • 3 tablespoons water
  • 3 tablespoons pine nuts
  • 1 bunch fresh spinach washed and stemmed
  • Pizza dough stretched and rolled out
  • 1/2 cup sun dried tomato basil pesto
  • 1 teaspoon Italian herbs
  • 1 teaspoon marjoram
  • 4 ounces feta cheese crumbled

Directions
  1. Preheat oven to 400.
  2. In large skillet heat olive oil over medium high and saute onion 5 minutes.
  3. Add in garlic slices and potatoes then stir 3 minutes.
  4. Add 3 tablespoons water then cover and cook until tender about 6 minutes.
  5. Add pine nuts and stir then add in spinach leaves and cook until just wilted.
  6. Remove from heat the spread pesto on prepare pizza dough.
  7. Lay onions, potatoes, garlic, pine nuts and spinach evenly over pesto and sprinkle with herbs.
  8. Crumble feta cheese over pizza and drizzle a little olive oil over potatoes and around outer crust.
  9. Bake 20 minutes then serve.
