FROZEN RASPBERRY CHEESECAKE

- 2 c. crushed shortbread cookies or vanilla wafers shopping list
- 1/2 stick butter,melted shopping list
- 1 (8-oz.) pkg. cream cheese, softened shopping list
- 1 can Eagle's Brand condensed milk shopping list
- 1/4 c. lemon juice shopping list
- 2 c. raspberry sherbet, softened shopping list
- 1 c. fresh raspberries shopping list
How to make it
- In a large bowl, combine the cookie crumbs and butter. Press onto the bottom of a greased springform pan. Freeze for 10 minutes. In a bowl, combine the cream cheese, milk and lemon juice until blended. Spread over the crust and freeze for 2 hours or until firm. Spread sherbet over the cream cheese layer, freeze 2 hours longer. Top with raspberries.
