Ingredients
  • 4 cups chicken broth
  • 3 15 oz. cans beans, your choice of kidney, butter, pinto, navy or black-eyed peas.
  • 3 medium carrots diced
  • 3 celery ribs, diced
  • 1 lb. smoked sausage, cut in 1/2 in. slices
  • 1 large onion chopped
  • 1/2 cup barley
  • 1/2 cup dried lentils
  • 1 tsp. hot sauce
  • 1 cup chopped fresh spinach

Directions
  1. In a dutch oven, place all ingredients except spinach. Cover and cook over medium heat for 60-90 minutes or until barley and lentils are tender. Stir in spinach and heat through.
