Banana Bread Pudding With Rum Sauce Recipe
This is a recipe that I obtained from my good friend and co-worker. This is one of her specialties and she brings it to potlucks in double and triple batches and there is never any leftover. Enjoy

Ingredients
  • 6 slices whole wheat bread torn into big cubes
  • 3 eggs
  • 3 ripe bananas mashed
  • 1 teaspoon ground cinnamon
  • 2 cups warm water
  • 14 ounce can sweetened condensed milk
  • 1/4 cup flaked coconut
  • 2 tablespoons butter melted
  • 2 tablespoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans
  • Rum Sauce:
  • 1/4 cup butter
  • 3/4 cup firmly packed brown sugar
  • 1/2 cup heavy cream
  • 2 tablespoons rum

Directions
  1. Preheat oven to 350 then place bread cubs in greased square baking pan.
  2. Beat together eggs, banana and cinnamon then add remaining ingredients except nuts and sauce.
  3. Pour mixture evenly over bread moistening completely then sprinkle pecans on top.
  4. Bake 50 minutes then cool and serve warm with rum sauce.
  5. To make sauce melt butter then add brown sugar and cream.
  6. Boil rapidly 10 minutes then add rum.
