Lobster With Candied Ginger Recipe
This recipes comes from an estate sale that I purchased in 1981. I have not made this but think it would make a very impressive dish. Let me know if you try it. Enjoy

Ingredients
  • 1/2 pound unsalted butter softened
  • 2 tablespoons finely chopped chervil
  • 2 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped mango
  • 1 tablespoon finely chopped candied ginger
  • 1 teaspoon sugar or honey
  • 1 large white onion sliced
  • 3 crushed black peppercorns
  • 1 bay leaf
  • 1/2 teaspoon salt
  • 3 lobsters

Directions
  1. Mix butter with chervil, parsley, mango, ginger and honey until it forms a paste.
  2. Transfer mixture to center of a sheet of plastic wrap and roll into a cylinder.
  3. Chill until firm.
  4. Place onions, peppercorns and bay leaf in a large pot of boiling salty water.
  5. Plunge lobsters headfirst into the pot then return to a boil.
  6. Reduce heat and simmer 8 minutes per pound.
  7. Remove lobster and run it under cool water then remove meat.
  8. Arrange lobster meat in a broiler safe dish then season with salt and pepper.
  9. Cut six 1/4" slices off butter and place on top of lobster.
  10. Broil until butter is melted and lobster is heated through.
