Holiday Cauliflower

- 1 large head cauliflower shopping list
- 1 (4 oz.) can sliced mushrooms shopping list
- 1/4 c. diced preen pepper shopping list
- 1/4 c. butter shopping list
- 1/3 c. milk shopping list
- 1 tsp. salt shopping list
- 1 c. shredded swiss cheese shopping list
- 2 Tbsps. chopped pimento shopping list
How to make it
- Break cauliflower in medium-size flowerettes; cook in boiling water until crisp-tender, about 10 minutes.
- Drain well; set aside.
- In a 2 quart sauce pan, saute mushrooms and green pepper in butter until tender.
- Blend in flour.
- Gradually stir in milk.
- Cook, stirring conatantly, over medium heat until mixture is thick.
- Stir in salt, cheese and pimento.
- Place half of the cauliflower in a buttered 2 quart casserole.
- Cover with half of the sauce; add remaining cauliflower.
- Top with sauce.
- Bake at 325 degrees for 15 minutes.
- Makes 8 servings.
