Spiced Sweet Potato Stuffing Recipe
This simple side dish combines two fall favorites (stuffing and sweet potatoes) for a spicy alternative to typical sweet potato casserole. It is low-fat and a great dish for diabetics.

Ingredients
  • 3/4 cup reduced-sodium chicken broth
  • 2 cups sweet potatoes, peeled and chopped
  • 12 slices raisin or cinnamon bread, toasted and cubed
  • 2 teaspoons Jamaican Jerk seasoning

Directions
  1. Preheat oven to 325°F.
  2. In a saucepan, bring the chicken broth to a boil. Add sweet potatoes; reduce heat. Cover and cook for 7-10 minutes, or until tender. Don't drain the broth.
  3. Add raisin bread and seasoning; stir until mixed well. Add more broth if needed to moisten.
  4. Spoon stuffing in a casserole dish (or use to stuff a turkey).
  5. Cover and bake for 25-30 minutes or until heated through.
