Southwest Garden Saute Recipe
This is a great vegetable dish loaded with so many great flavors.

Ingredients
  • 4 slices bacon cut into 1/2" pieces
  • 2 medium white onions chopped
  • 2 cups zucchini iced
  • 1 cup new potatoes unpeeled and diced
  • 1/4 cup chunky salsa
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon ground cumin
  • 1 cup tomato diced
  • Sour cream

Directions
  1. Fry bacon in skillet until crisp then remove from skillet and reserve.
  2. Add onions to skillet then cook until tender but not brown.
  3. Add zucchini, potatoes, salsa, sugar and cumin then cook over medium high heat.
  4. Stir frequently until vegetables are crisp tender about 7 minutes.
  5. Stir in tomato and reserved bacon then heat through and top with sour cream.
