Southwest Garden Saute

- 4 slices bacon cut into 1/2" pieces shopping list
- 2 medium white onions chopped shopping list
- 2 cups zucchini iced shopping list
- 1 cup new potatoes unpeeled and diced shopping list
- 1/4 cup chunky salsa shopping list
- 2 teaspoons granulated sugar shopping list
- 1/2 teaspoon ground cumin shopping list
- 1 cup tomato diced shopping list
- sour cream shopping list
How to make it
- Fry bacon in skillet until crisp then remove from skillet and reserve.
- Add onions to skillet then cook until tender but not brown.
- Add zucchini, potatoes, salsa, sugar and cumin then cook over medium high heat.
- Stir frequently until vegetables are crisp tender about 7 minutes.
- Stir in tomato and reserved bacon then heat through and top with sour cream.
