How to make it

  • saute prawns, onion and mushrooms in large pan on medium heat until tender (5 mins)
  • add chopped garlic
  • add wine and increase heat until bubbling
  • take pan off burner and put ingredients in bowl
  • Butter bottom of deep dish casserole dish
  • line bottom of dish with mash
  • add an even sprinkling of mozza on top of mash
  • layer risotto evenly
  • add chunks of brie along top of risotto
  • shake prawns, onions and mushrooms on top of risotto
  • sprinkle remaining mozza and parma on the top
  • sprinkle gluten free bread crumbs
  • Voila
