Verde salsa

- About 2 lbs. of tomatillos (15 to 25, depending on size) shopping list
- 2 to 4 jalapenos (depending on how hot you want it) shopping list
- 1 to 2 tablespoons chopped cilantro shopping list
- 4 cloves garlic shopping list
- juice of one lime shopping list
- salt shopping list
- 1 to 2 tablespoons olive oil shopping list
How to make it
- Peel, cut stems off, and rinse tomatillos well
- Slice tomatillos in half and spread them on a roasting pan (I use a 'silpat')
- roast in 450ยบ oven for 12 to 14 min. , let cool (7 or 8 min.)
- while tomatillos are roasting, seed and cut jalapenos in small pieces (easier for the food processor to chop them)
- wash and chop cilantro
- peel garlic cloves and chop a little (again, easier for the food processor to finish the job)
- after tomatillos are somewhat cooled, put them in food processor with cilantro, jalapenos, garlic and lime, turn on high until smooth
- put in a small amount of salt to taste
- turn food processor back on and stream in olive oil then 1 to 2 tablespoons water until it is a good consistancy.
- let salsa cool and pour into jars.
