Corn Bread-Topped Pot Pie Recipe
This is a wonderful & easy recipe for working women (like me..LOL)..it's also southern & a "feel-good" dish.

Ingredients
  • 2 c chopped cooked beef
  • 1 10 oz. can brown gravy
  • 1 cup canned mixed vegetables or frozen mixed vegetables, thawed
  • 1 cup self-rising cornmeal
  • 2 eggs
  • 1/2 cup milk
  • 1 (15.25 oz.) can Mexican-style corn, drained
  • 1 cup shredded Cheddar cheese

Directions
  1. Preheat oven to 375 degrees
  2. Grease a medium round baking dish
  3. add beef, gravy & vegetables, mix well
  4. Combine cornmeal, eggs, corn & cheddar in a medium bowl, mix well
  5. Spoon cornmeal mixture, spread evenly over top
  6. Bake until corn bread is golden (about 30 min)
  7. Serve with large serving spoon.
