  • ABOUT 300 G. COD FILLLETS
  • 2 O` WHOLEMEAL BREAD
  • 1 LEMON
  • 2 TBSPN PARSLEY
  • 1 OZ. FLAKED ALMONDS
  • 1 TBSPN OLIVE OIL

Directions
  1. PRE HEAT OVEN 200 DEGREES C
  2. REMOVE SKIN FROM COD FIISH
  3. DIVIDE INTO 4 EQUAL PIECES IF NECESSARY
  4. PLACE ON LIGHTLY GREASED BAKING SHEET
  5. CUBE BREAD, PLACE IN A FOOID PROCESSOR AND NMAKE INTO FINE BREADCRUMBS
  6. PLACE IN BOWL, ADD GRATED RIND OF HALF A LEMON, FINELY CHOPPED PARSLEY, FLAKED ALMONDS, OLIVE OIL AND A GOOD SQUEEZE OF LEMON JUICE. MIX TOGETHER
  7. SPOON ON TOP OF FISH
  8. BAKE IN OVEN FOR APPROXIMATELY 20 MINUTES UNTIL TOPPING IS GOLDEN AND FISH IS COOKED.
  9. SERVE WITH STEAMED VEGETABLES
  10. COOKS TIP, CUT WEDGES OF LEMON OF REMAINING HALF ANSD PLACE WITH FISH.
