  • PRE HEAT OVEN 200 DEGREES C
  • REMOVE SKIN FROM COD FIISH
  • DIVIDE INTO 4 EQUAL PIECES IF NECESSARY
  • PLACE ON LIGHTLY GREASED BAKING SHEET
  • CUBE BREAD, PLACE IN A FOOID PROCESSOR AND NMAKE INTO FINE BREADCRUMBS
  • PLACE IN BOWL, ADD GRATED RIND OF HALF A LEMON, FINELY CHOPPED PARSLEY, FLAKED ALMONDS, OLIVE OIL AND A GOOD SQUEEZE OF LEMON JUICE. MIX TOGETHER
  • SPOON ON TOP OF FISH
  • BAKE IN OVEN FOR APPROXIMATELY 20 MINUTES UNTIL TOPPING IS GOLDEN AND FISH IS COOKED.
  • SERVE WITH STEAMED VEGETABLES
  • COOKS TIP, CUT WEDGES OF LEMON OF REMAINING HALF ANSD PLACE WITH FISH.
