CHILE EGG PUFF This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mackey Estate in Texarkana, Texas in 1994.

Ingredients
  • 10 eggs
  • 1/2 cup all-purpose flour sifted
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 cups small curd cottage cheese
  • 1 pound Monterey jack cheese grated
  • 1/2 cup melted butter
  • 1 can mild green chilies diced

Directions
  1. Preheat oven to 350 then butter a rectangular baking dish.
  2. Crack eggs into a large bowl and beat thoroughly.
  3. Stir and toss together flour, baking powder and salt.
  4. Sift over the eggs and beat until blended.
  5. Beat in cottage cheese, cheese, butter and chilies.
  6. Pour mixture into prepared pan and bake for 40 minutes or until puffy and set.
