Ingredients
  • An easy skillet chicken recipe for two, made with chicken breasts, bell pepper, garlic, tomatoes, and seasonings.
  • Ingredients:
  • 2 chicken breast halves and 2 chicken thighs
  • 1 tablespoon olive oil
  • 1/4 cup chopped onion
  • 1/2 green bell pepper, thinly sliced
  • 1 small clove garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1/2 teaspoon salt
  • 1/2 teaspoon leaf oregano, crumbled
  • 1 small bay leaf
  • ground pepper, to taste

Directions
  1. In a skillet, brown chicken in the oil.
  2. Add onion, green bell pepper, and garlic; sauté until tender.
  3. Add remaining ingredients; bring to a boil.
  4. Cover and simmer for 30 to 40 minutes, until chicken is tender.
  5. Serves 2 to 3

P.S. why does it have "pineapple" in the title and there is no pineapple in the ingred?
