Spaghetti Squash Primavera

- 1 medium spaghetti squash shopping list
- 3 roma tomatoes shopping list
- 1/4 red onion, thinly sliced shopping list
- 1 Large carrot, chopped diagonally to increase length of pieces shopping list
- 3 celery Stalks, chopped diagonally to increase length of pieces shopping list
- 3-4 finely chopped garlic cloves shopping list
- ANY OTHER VEGGIES YOU WANT shopping list
- i like zucchini and broccoli best. shopping list
- 3 tbs. olive oil shopping list
- 3 tbs. fresh chopped basil shopping list
- 3 tbs. fresh chopped parsley shopping list
- 1 tbs. fresh thyme shopping list
- parmesan cheese (if you're vegan it's still really good without this) shopping list
How to make it
- Cut spaghetti squash in half lengthwise, clean out seeds, place meat-side down in 2 inches of water in a baking pan.
- Cook 20-30 minutes, run fork through meat to release noodle like meat.
- Heat olive oil in a saucepan and add garlic, red onion, carrot, and celery.
- Cook over medium to medium-high heat for 3 to 5 minutes.
- Add tomatoes, cook 1-2 minutes
- Toss in freshly chopped herbs, stir in.
- IF YOU'RE VEGAN IGNORE THE NEXT STEP
- Toss in parmesan cheese to taste.
- Serve immediately.
