Spaghetti Squash Primavera Recipe
This is a great vegetarian dish, very specially designed for the palates of those who eat their veggies.

Ingredients
  • 1 medium Spaghetti Squash
  • 3 Roma Tomatoes
  • 1/4 Red Onion, thinly sliced
  • 1 Large Carrot, chopped diagonally to increase length of pieces
  • 3 Celery Stalks, chopped diagonally to increase length of pieces
  • 3-4 finely chopped Garlic Cloves
  • ANY OTHER VEGGIES YOU WANT
  • i like Zucchini and Broccoli best.
  • 3 tbs. Olive Oil
  • 3 tbs. fresh chopped Basil
  • 3 tbs. fresh chopped Parsley
  • 1 tbs. fresh Thyme
  • Parmesan Cheese (if you're vegan it's still really good without this)

Directions
  1. Cut spaghetti squash in half lengthwise, clean out seeds, place meat-side down in 2 inches of water in a baking pan.
  2. Cook 20-30 minutes, run fork through meat to release noodle like meat.
  3. Heat olive oil in a saucepan and add garlic, red onion, carrot, and celery.
  4. Cook over medium to medium-high heat for 3 to 5 minutes.
  5. Add tomatoes, cook 1-2 minutes
  6. Toss in freshly chopped herbs, stir in.
  7. IF YOU'RE VEGAN IGNORE THE NEXT STEP
  8. Toss in parmesan cheese to taste.
  9. Serve immediately.
