How to make it

  • Cut spaghetti squash in half lengthwise, clean out seeds, place meat-side down in 2 inches of water in a baking pan.
  • Cook 20-30 minutes, run fork through meat to release noodle like meat.
  • Heat olive oil in a saucepan and add garlic, red onion, carrot, and celery.
  • Cook over medium to medium-high heat for 3 to 5 minutes.
  • Add tomatoes, cook 1-2 minutes
  • Toss in freshly chopped herbs, stir in.
  • IF YOU'RE VEGAN IGNORE THE NEXT STEP
  • Toss in parmesan cheese to taste.
  • Serve immediately.
