How to make it

  • Preheat oven to 350 degrees F.
  • Heat a medium-sized, nonstick, oven proof skillet over medium-high heat. Add butter and brown sugar, stirring until brown sugar is dissolved. Do not burn.
  • Remove skillet from heat.
  • Add sliced strawberries and toss until well coated. Arrange strawberries in the bottom of the skillet. Sprinkle with half of the granola.
  • Whisk together egg whites and vanilla extract. Season with salt. Pour over strawberries and granola.
  • Bake egg mixture on top rack (to prevent sugar on bottom burning) in skillet until eggs are puffy and the center is completely set--about 12 minutes depending on your oven.
  • Allow frittata to cool slightly and invert on a decorated plate. Garnish with remaining granola and serve with honey-sweetened yogurt.
