Strawberry Granola Frittata

- 2 cups liquid egg whites (or about 16 separated egg whites) shopping list
- 2 cups strawberries, sliced lengthwise shopping list
- 1 cup granola shopping list
- 1/2 stick butter or 4 tbsp clarified butter or ghee shopping list
- 3 tbsp light brown sugar shopping list
- 1 tsp vanilla extract shopping list
- salt to taste shopping list
- ********************** shopping list
- 3 cups plain yogurt shopping list
- 3 tbsp honey shopping list
How to make it
- Preheat oven to 350 degrees F.
- Heat a medium-sized, nonstick, oven proof skillet over medium-high heat. Add butter and brown sugar, stirring until brown sugar is dissolved. Do not burn.
- Remove skillet from heat.
- Add sliced strawberries and toss until well coated. Arrange strawberries in the bottom of the skillet. Sprinkle with half of the granola.
- Whisk together egg whites and vanilla extract. Season with salt. Pour over strawberries and granola.
- Bake egg mixture on top rack (to prevent sugar on bottom burning) in skillet until eggs are puffy and the center is completely set--about 12 minutes depending on your oven.
- Allow frittata to cool slightly and invert on a decorated plate. Garnish with remaining granola and serve with honey-sweetened yogurt.
