Spicy Stuffed Peppers Recipe

Ingredients
  • 6 Anaheim or Pablano Pepper
  • 1 lb. Chorizo Sausage
  • 1 can Diced Tomato with Green Chilies
  • 1 can Tomato Sauce
  • Colby / Monterey Jack Cheese

Directions
  1. Pre-Heat oven to 375
  2. Cut peppers in half, de-seed, cut off tops. Lay peppers flat, inside up in baking dish
  3. In mixing bowl, combine Chorizo Sausage, and drained can of Tomatoes with Green Chilies.
  4. Fill peppers with sausage mixture evenly.
  5. Top with tomato sauce
  6. Place tin foil over dish and bake for 45 minutes
  7. After 45 minutes, remove tin foil, top with shredded cheese and bake for remaining 10 - 15 minutes uncovered until brown and bubbly
  8. Make Mashed Potatoes as a side and use the juice over the potatoes - aaaawwweessssommme!
